چکیده
In this study, physico-chemical properties of honeys samples obtained from different locations of Turkey were investigated. Moisture, diastase activity, Hydroxy Methyl Furfural (HMF), viscosity, acidity, total glucose+fructose, protein and ash contents of honey samples ranged from 17.1% to 20.0%, 10.9 to 17.9, 1.34 to 31.28 mg/kg, 2.48 to 8.42 Pa s, 18.2 to 47.5 meq/kg, 51.31% to 68.30%, 0.60% to 0.99% and 0.01% to 0.12%, respectively. The colour parameters, namely L, a, b changed between 24.56 and 34.16, 0.08 and 0.67, 0.60 and 5.09, respectively. The magnesium was found at high level in all samples. Cornflower honey sample had the highest phenolic content (645.85 mg/100 g). While antioxidant activity of cedar honey sample is found at the highest level, thorn honey sample showed the least antioxidant activity. In general, dark coloured honey samples had higher phenolic content levels and antioxidant activity than the light coloured honey samples.

Anti-HIV-1 Activity of Eight Monofloral Iranian Honey Types
Monofloral Iranian honeys from eight floral sources were analyzed to determine their anti-HIV-1 activities as well as their effects on lymphocyte proliferation. The Peripheral Blood Mononuclear Cells (PBMCs) used in this study were prepared from five healthy volunteers who were seronegative for HIV, HCV, HBV and TB. The anti-HIV-1 activity of eight different honeys was performed by quantitative...
متن کاملPEROXIDE AND NON-PEROXIDE ANTIBACTERIAL ACTIVITY IN SOME IRANIAN HONEYS
A range of some Iranian monofloral honeys were assayed for antibacterial activity with and without hydrogen peroxide which is inactivated by the addition of catalase. I t was found that the high amount of antibacterial activity in honeys was due to a factor other than hydrogen peroxide. The test microorganism Staphylococcus aureus, was not inhibited by the acidity or the osmolarity of the h...

BACKGROUND There is no available information on physicochemical and antioxidant properties on Bangladeshi honey. We investigated five different monofloral and three different multifloral honey samples collected from different parts of Bangladesh. METHODS The levels of phenolics, flavonoids, ascorbic acid, ascorbic acid equivalent antioxidant content (AEAC), proline, protein and antioxidants w...
متن کاملViper’s bugloss (Echium spp.) honey typing and establishing the pollen threshold for monofloral honey
Honey samples (n = 126) from Castilla-La Mancha (Central Spain) were characterized based on their physicochemical properties and a melissopalynological analysis. The latter showed that Echium pollen type was the dominant palynomorph in most samples, representing at least 30% of the pollen in each sample. As anticipated, a relationship was observed between the proportion of this pollen and the p...
متن کاملAntimicrobial activity of different Finnish monofloral honeys against human pathogenic bacteria
The antimicrobial activity and phenolic compounds of five Finnish honey products against important human pathogens Streptococcus pneumoniae, S. pyogenes, Staphylococcus aureus, and methicillin-resistant S. aureus were analyzed. Microbroth dilution method and HPLC-DAD were used in antimicrobial testing and phenolic compound determination, respectively. Significant antimicrobial activity (p < 0.0...
